Finally all sorted.

Ended up using the old thermostat housing but I did have a new bypass hose and 180F thermostat (that’s what was in there).

Those bypass hoses are a pain. Let it sit in the sun for a bit and still shaved my knuckles.

Glad it is sorted.  And you are right, the bypass hoses are a huge pain!  (Reminds me - I have to put one on Big Blue.  )
