Why not ask your truck what is wrong with it???

I mean you're in pretty deep with a maf stroker, but on board diagnostics  don't know what they're in.
They just spit out what you ask them.

Lil'Red is a '87 F250 HD, 4.10's, 1356 4x4, Zf-5, 3G, PMGR, Saginaw PS, desmogged with a Holley 80508 and Performer intake.
Too much other stuff to mention.

I'm a good 1500 miles northeast of Atlanta, and even I struggle with no AC...
Then again, my heat threshold would be a bit lower...lol.
With the humidity here in the summer, people start complaining once it gets over 80F.

I have not heard one of these stroked 302's in the flesh yet, but they do seem to be quite popular.

You are on the map.  But I moved you a bit north of Johns Creek so you wouldn't be on top of Matthew.  However, since we aren't trying for precision so people can't drive to your house, it shouldn't be a problem.  But if you want it moved just tell me where.
