Have you tried pulling codes? Why not ask your truck what is wrong with it??? I mean you're in pretty deep with a maf stroker, but on board diagnostics don't know what they're in. I'm a good 1500 miles northeast of Atlanta, and even I struggle with no AC... Then again, my heat threshold would be a bit lower...lol. With the humidity here in the summer, people start complaining once it gets over 80F. I have not heard one of these stroked 302's in the flesh yet, but they do seem to be quite popular.
