Although I do see mention of a brass restrictor plate on his site That's interesting as Tim bought the rights to the discontinued RS-333 and is having them made in Australia. This page at flowcooler offers those options. https://www.flowkoolerwaterpumps.com/products/robertshaw-333-160-thermostat-and-brass-bypass-1 OH, i guess that makes sense then, they usually have a 160, but thats the one out of stock hence only a 180 or 195 are remaining options. I guess that was confusing me, usually sold out options still would show in the drop down box but would be greyed out and unselectable. Yesterday was a long day what can i say.
